How To Adult

Ok so here is the thing with millennials. Most of us don’t actually know how to basic adult stuff. Ask us how to rotate your PDF file of export a website and we got you. Ask us to make a basic, well-rounded meal and we give you a blank stare. It’s not our fault, we were never taught how to pay a bill or fill in a tax form at school.

Not to worry, because we’ve got our most adult(ish) team member on board to go through the trials and tribulations that is basic adulting.

In this mini-series, our favourite ex-punk, now wanna-be grown up Emma, will go around and talk to people about basic adult stuff and report back to you. You’ll learn crazy things like how to cook without giving yourself salmonella and what’s the deal with this house-owning nonsense. It’ll be great.

First up, we partnered with our friends at So Good who they gave us some Coconut Milk and Almond Milk to play with. Both are great alternatives to standard milk, and more healthy. So on that note, Emma made an easy to follow rice pudding. A great, healthy dinner (or general meal) that will not cost very much and convince your friends you are a functioning adult! Woohoo.

You will need:

(make for 5 people)

half a cupof  So Good Almond milk

400grms So Good Coconut milk

1x cup of rice

5x tablespoons coconut flakes

half cup of raw sugar

1x cinnamon stick

1/3 of a nutmeg

Preheat oven to 170c.

Cook one cup of rice in two cups of water and cinnamon stick in a pot until tender.

Add 400 grams of So Good coconut milk, half a cup of raw sugar and freshly grated nutmeg.

Bake for 30 minutes.

Add almond milk until the pudding has a creamy texture (add slowly while stirring).

Sprinkle with toasted coconut and fruit and serve.

if that looks ‘soooo good’ (see what I did there?) to you, then you’ll be stoked to know that we are giving away 4x sets of the Soo Good coconut and almond milk to giveaway! Check the facebook page for details.
